African-American women lose weight, gain hope in nutrition class

Funded by a grant from the Florida Department of Health, the “Eight Weeks to Wellness” class teaches diabetics how to manage their disease, in hopes of reducing emergency-room visits.

In March, Weaver, Gaines and Carson — the authors of The New Soul Food Cookbook for People with Diabetes — officially opened the doors to their new offices in Orlando’s Parramore neighborhood. The building, which once housed a bookstore, today boasts a state-of-the-art kitchen and demonstration areas, thanks to grants from the city, the Darden Foundation, the Blue Foundation of Blue Cross and Blue Shield of Florida and Florida Hospital’s Community Impact Council.
